Tasting Notes

The wine is generally ready for drinking after 12-18 months, although a 2- to 3-year ageing period in the bottle enhances its qualities.
Pale straw colour increasing in intensity over time.
Flowery scents, with tropical fruits, golden apple, honey, vanilla and breadcrust hues. Interesting mineral notes.
Full-bodied and intense on the palate, never aggressive. Because of its versatility, it pairs successfully with tasty fish dishes, white meat, grilled meat, flans, vegetables.
Serving temperature: 12-14° C.
Total alcohol: 12,8-13,5% vol.

Vineyards

The grapes are harvested in our estate vineyard planted since 1978, currently one of the oldest Chardonnay vineyards in Piedmont, at 170 meters above sea level. With a north-west exposure on a 10% slope, the plot has a widely prevalent calcareous soil, which favours water drainage and is poor in organic substances, with alternating strata of sand, tuff and clay.
Owing to the low ridges around it, the site enjoys many hours of lighting without heat peaks, thanks to its exposure and to constant breezes.
The grapes are always in a very healthy state, and are characterized by excellent aromas and acidity, that make it possible to delay harvest until the desirable sugar content has been obtained.
The presence of Chardonnay Musqué is significant and adds to the bouquet’s complexity.

Harvest & winemaking

Depending on the year, harvest begins from August 19 to Sept.10th.
Vinification takes place in 300 liters french oak barrels, at 12° C, during 3-7 months, the wine sits on the lees for 9 months at a temperature of 12-13°C, with frequent batonages. Possible partial malo-lactic fermentation.
