It’s fruity and fragrant, with a persistent, complex bouquet of scents, including banana, apricot, citrus fruits and fresh hay
Despite its complexity, this wines is easy to drink and best drunk quite young. Cortese is well paired with hors d’oeuvres, light fish, shellfish, pasta, risotto, vegetable dishes, bruschetta and light snacks. But it can be especially delightful as an aperitif.

Harvest & winemaking

Based on 100% Cortese grapes.
Depending on the year, harvest begins September 9th to Sept. 20th. Vinification takes place in stainless steel vats only, at a temperature of 17-18° C, with or without a partial malolactic fermentation. The wine is left on the lees at low temperatures for some weeks, in order to gain a durability of 2-3 years. The last part of alcoholic fermentation takes place in pressure thank, obtaining the traditional low sparkling charactere. Bottled during winter season.
