Enjoyable acidity, light but clear tannins, softening with ageing.<br \/>\nBest with red and grilled meat, charcuterie and cheese, soups and venison; an ideal match for fat and tasty dishes, which highlight its \u201cmouth-cleaning\u201d properties.<br \/>\nServing temperature: 18-20\u00b0C.<br \/>\nTotal alcohol: 13.5-14% by vol.[\/vc_column_text][vc_column_text]\n<h3><span style=\"color: #c62132\">Vineyards<\/span><\/h3>\n[\/vc_column_text][vc_column_text]This wine takes its inspiration from Asti\u2019s classic Barberas, which are generally rich in bouquet and colour; although sometimes with a lovely acidity on the palate, they are a perfect accompaniment for local dishes, including processed meats and cheeses.<br \/>\nThe grapes come from different vineyards located on the best hills of our area.<br \/>\nThe proportion of grapes from the various vineyards can vary every year, depending on the chemical properties of the grapes, in an effort to keep constant the sensorial and qualitative characteristics of the product.[\/vc_column_text][vc_column_text]\n<h3><span style=\"color: #c62132\">Harvest &amp; winemaking<br \/>\n<\/span><\/h3>\n[\/vc_column_text][vc_column_text]Depending on the season\u2019s weather pattern, harvest usually begins between September 10th and October 6rd<br \/>\nImmediately after standard vinification in steel at 26\u00b0 C, 20-30% of the product is stored in oak and the the remaining part in steel tanks.
